Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon (for batter)
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup peeled, chopped apples (Fuji or Honeycrisp work well)
- 1/2 cup milk
- For the Glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/4 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set this dry mixture aside.
- In a large bowl, mix the granulated sugar and melted butter until combined. Beat in the eggs one at a time, then stir in the vanilla extract.
- Alternate adding the dry ingredients and the milk to the wet ingredients, beginning and ending with the dry mixture. Mix only until just combined; do not overmix.
- Gently fold in the chopped apples using a spatula.
- Pour the batter into your prepared loaf pan.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- While the bread cools slightly in the pan (about 15 minutes), whisk together the powdered sugar, milk, and cinnamon for the glaze until smooth.
- Remove the bread from the pan and place it on a wire rack. Drizzle the cinnamon glaze evenly over the warm bread.
- Allow the glaze to set before slicing and serving your moist apple bread.
Notes
- For extra moisture, use apples that retain some firmness after baking.
- Do not overmix the batter; this keeps your bread tender.
- You can add 1/2 cup of chopped walnuts or pecans with the apples if you desire crunch.
- The bread stores well covered at room temperature for up to three days.
