Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2 cups mixed berries (fresh or frozen)
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice


Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine flour, rolled oats, 1/2 cup sugar, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan.
  5. In a separate bowl, gently toss the mixed berries with 2 tablespoons sugar, cornstarch, and lemon juice.
  6. Spread the berry mixture evenly over the crumble base.
  7. Sprinkle the remaining crumble mixture over the berry layer.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbly.
  9. Let the bars cool completely in the pan before lifting them out and cutting into squares.

Notes

  • If using frozen berries, do not thaw them before mixing with sugar and cornstarch.
  • For a richer flavor, you can add a pinch of cinnamon to the crumble mixture.
