- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine flour, rolled oats, 1/2 cup sugar, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan.
- In a separate bowl, gently toss the mixed berries with 2 tablespoons sugar, cornstarch, and lemon juice.
- Spread the berry mixture evenly over the crumble base.
- Sprinkle the remaining crumble mixture over the berry layer.
- Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbly.
- Let the bars cool completely in the pan before lifting them out and cutting into squares.
Notes
- If using frozen berries, do not thaw them before mixing with sugar and cornstarch.
- For a richer flavor, you can add a pinch of cinnamon to the crumble mixture.
