Mississippi Pot Roast Sliders

Description

Simple slow cooker shredded beef made into buttery, pickle-topped sliders perfect for parties or game day.


Ingredients

  • 3 lb beef chuck roast
  • 1 (1 oz) packet dry ranch seasoning mix
  • 1 (1 oz) packet dry au jus gravy mix
  • 1/2 cup pepperoncini peppers (drained, reserve juice)
  • 1/2 cup butter, melted
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 12 Hawaiian sweet rolls
  • 1/2 cup sliced dill pickles
  • 1/4 cup reserved pepperoncini juice


Instructions

  1. Place the beef roast in the slow cooker.
  2. Sprinkle the ranch seasoning mix and au jus gravy mix over the roast.
  3. Pour the reserved pepperoncini juice over the top.
  4. Add the whole pepperoncini peppers around the roast.
  5. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until the beef is easily shredded.
  6. Remove the roast from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to coat with the juices.
  7. Preheat your oven to 350 degrees Fahrenheit.
  8. Slice the Hawaiian rolls in half horizontally, keeping them connected.
  9. In a small bowl, mix the melted butter, Worcestershire sauce, garlic powder, and onion powder.
  10. Place the bottom half of the rolls in a 9×13 inch baking dish. Top evenly with the shredded beef. Place the pickle slices over the beef.
  11. Place the top half of the rolls over the pickles. Brush the butter mixture evenly over the top of the rolls.
  12. Bake for 15 to 20 minutes, or until the tops are golden brown and the filling is hot.
  13. Slice the rolls into individual sliders before serving.

Notes

  • You can shred the beef a day ahead and store it in the refrigerator with some of the cooking liquid. Reheat before assembling the sliders.
  • To keep the sliders warm for serving, cover the baking dish loosely with foil after baking and return to a 200 degree Fahrenheit oven for up to one hour.
