Description

These mini quiche muffins are perfect for a kid-friendly lunchbox. They are easy to make and packed with flavor.


Ingredients

  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup cooked and crumbled bacon or ham (optional)
  • 1/2 cup finely chopped vegetables (e.g., bell peppers, onions, spinach)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Stir in the shredded cheese, cooked bacon or ham (if using), and chopped vegetables.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about two-thirds full.
  5. Bake for 20-25 minutes, or until the quiches are set and lightly golden brown.
  6. Let the mini quiches cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  7. Pack them in your child’s lunchbox once cooled.
