Easy individual fruit pizza cookies perfect for parties.

- 1 cup butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup milk
- Assorted fresh fruits (strawberries, blueberries, kiwi, mandarin oranges, etc.)
- 1/4 cup apricot jam, melted and strained (optional glaze)
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between cookies.
- Bake for 8-10 minutes, or until the edges are lightly golden. Let cool completely on the baking sheets.
- While cookies are cooling, prepare the cream cheese frosting. In a medium bowl, beat together the softened cream cheese and powdered sugar until smooth.
- Gradually beat in the milk until the frosting is light and spreadable.
- Once cookies are cool, spread a layer of cream cheese frosting on each cookie.
- Arrange assorted fresh fruits on top of the frosting as desired.
- If using, brush the fruit with melted and strained apricot jam for a glossy finish.
- Serve immediately or chill until ready to serve.
Notes
- You can use a variety of your favorite fruits for these pizzas.
- Ensure the cookies are completely cool before frosting.
- For easier spreading, make sure your cream cheese is very soft.
