Easy individual fruit pizza cookies perfect for parties.


Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • Assorted fresh fruits (strawberries, blueberries, kiwi, mandarin oranges, etc.)
  • 1/4 cup apricot jam, melted and strained (optional glaze)


Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between cookies.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Let cool completely on the baking sheets.
  8. While cookies are cooling, prepare the cream cheese frosting. In a medium bowl, beat together the softened cream cheese and powdered sugar until smooth.
  9. Gradually beat in the milk until the frosting is light and spreadable.
  10. Once cookies are cool, spread a layer of cream cheese frosting on each cookie.
  11. Arrange assorted fresh fruits on top of the frosting as desired.
  12. If using, brush the fruit with melted and strained apricot jam for a glossy finish.
  13. Serve immediately or chill until ready to serve.

  • You can use a variety of your favorite fruits for these pizzas.
  • Ensure the cookies are completely cool before frosting.
  • For easier spreading, make sure your cream cheese is very soft.
