These Million Dollar Bacon Deviled Eggs transform a classic appetizer into an unforgettable, indulgent bite. Crispy bacon, creamy yolks, and a touch of sweetness create a rich flavor.

- 6 large eggs
- 4 strips thick-cut bacon, cooked and crumbled
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon sugar
- Pinch of salt
- Pinch of black pepper
- Smoked paprika for garnish
- Fresh chives, chopped, for garnish (optional)
Instructions
- Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch.
- Bring water to a rolling boil over high heat.
- Once boiling, immediately remove the pan from heat, cover, and let stand for 10-12 minutes.
- Drain the hot water and transfer eggs to an ice bath for 5 minutes to stop cooking.
- Carefully peel the cooled eggs. Slice each egg in half lengthwise.
- Gently scoop out the yolks into a medium bowl. Place the egg white halves on a platter.
- Mash the egg yolks with a fork until smooth.
- Add mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper to the mashed yolks. Mix until creamy and well combined.
- Stir in most of the crumbled bacon, reserving some for garnish.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Garnish with the reserved crumbled bacon, a sprinkle of smoked paprika, and chopped chives if desired.
- Chill for at least 30 minutes before serving for best flavor.
Notes
- For easier peeling, use eggs that are a few days old.
- Adjust mayonnaise and mustard to your taste preference.
- For extra flavor, cook the bacon until very crispy.
