Ingredients

Scale
  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup grated cotija cheese, plus more for garnish
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder, plus more for garnish
  • 1/4 teaspoon salt

Instructions

  1. If using fresh corn, cook kernels by boiling or grilling until tender. If using frozen corn, thaw and drain.
  2. In a large bowl, combine mayonnaise, sour cream, cotija cheese, cilantro, lime juice, minced garlic, chili powder, salt, and pepper. Stir until well combined.
  3. Add the corn kernels to the bowl and gently toss to coat evenly with the dressing.

  5. Serve immediately or chill for later.

Notes
