Amazing 1-Bite Meringue Cookies Recipe Secrets

  • Author: Lina Kohn
  • Total Time: 3 hours 50 minutes (includes cooling time)
  • Yield: About 3 dozen
  • Diet: Gluten Free

Description

Create stunning, light, and crisp meringue cookies using this classic recipe. These delicate treats are naturally gluten-free and perfect for any celebration, especially holidays. Follow these steps to achieve a perfectly sweet, airy texture every time.

Ingredients

Scale
  • 4 large egg whites, room temperature
  • 1 cup superfine (caster) sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to the lowest setting, usually between 175°F and 200°F (80°C and 95°C). Line baking sheets with parchment paper.
  2. Make sure your mixing bowl and whisk attachment are completely clean and free of any grease.
  3. Beat the egg whites and cream of tartar with an electric mixer on medium speed until soft peaks form.
  4. Gradually add the superfine sugar, one tablespoon at a time, while beating continuously on high speed. Scrape down the sides of the bowl as needed.
  5. Continue beating until the meringue is stiff, glossy, and holds firm peaks. When you rub a small amount between your fingers, you should not feel any sugar granules.
  6. Gently fold in the vanilla extract and salt using a spatula.
  7. Transfer the meringue to a piping bag fitted with your desired tip (star tips work well for decorative shapes).
  8. Pipe small mounds or shapes onto the prepared baking sheets. Keep them uniform in size for even baking.
  9. Bake for 1 to 1.5 hours, depending on size, until the cookies lift easily off the parchment and feel dry to the touch. They should not brown.
  10. Turn off the oven, prop the door open slightly with a wooden spoon, and let the cookies cool completely inside the oven for at least 1 hour, or overnight. This drying process is key to crispness.

Notes

  • Ensure your egg whites are at room temperature for better volume.
  • Use superfine sugar; regular granulated sugar may not dissolve properly.
  • If your cookies weep (leak syrup), they were likely underbaked or cooled too quickly.
  • For extra flavor, add a few drops of food coloring or a teaspoon of cocoa powder with the vanilla.
  • Store finished cookies in an airtight container at room temperature.
