Description

Prepare this simple, creamy Ambrosia Salad ahead of time for your Memorial Day gathering. It uses traditional ingredients and keeps well when chilled.

  • 1 (20 ounce) can crushed pineapple, drained
  • 1 (15 ounce) can mandarin oranges, drained
  • 1 (10 ounce) jar maraschino cherries, drained and halved
  • 1 cup miniature marshmallows
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans or walnuts (optional)
  • 1 cup heavy whipping cream
  • 1/2 cup sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. In a large bowl, gently combine the drained pineapple, mandarin oranges, halved cherries, miniature marshmallows, coconut, and nuts if you are using them. Set aside.
  2. In a separate medium bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form.
  3. Add the sour cream, powdered sugar, and vanilla extract to the whipped cream. Beat until just combined and the mixture is smooth. Do not overmix.
  4. Gently fold the whipped topping mixture into the fruit and marshmallow mixture until everything is evenly coated.
