Description
Prepare this simple, creamy Ambrosia Salad ahead of time for your Memorial Day gathering. It uses traditional ingredients and keeps well when chilled.

- 1 (20 ounce) can crushed pineapple, drained
- 1 (15 ounce) can mandarin oranges, drained
- 1 (10 ounce) jar maraschino cherries, drained and halved
- 1 cup miniature marshmallows
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans or walnuts (optional)
- 1 cup heavy whipping cream
- 1/2 cup sour cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, gently combine the drained pineapple, mandarin oranges, halved cherries, miniature marshmallows, coconut, and nuts if you are using them. Set aside.
- In a separate medium bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form.
- Add the sour cream, powdered sugar, and vanilla extract to the whipped cream. Beat until just combined and the mixture is smooth. Do not overmix.
- Gently fold the whipped topping mixture into the fruit and marshmallow mixture until everything is evenly coated.
- Cover the bowl tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
- Stir gently before serving cold.
Notes
- For best results, drain the canned fruit very well to prevent the salad from becoming watery.
- You can make this salad up to 24 hours in advance. Keep it covered and chilled until serving time.
- Transport this salad in a well-insulated cooler with ice packs to keep it cold for potlucks.
