- 12 ounces pasta
- 7 ounces tuna, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup red onion, thinly sliced
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, tuna, cherry tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to combine.
- Stir in the chopped parsley.
- Serve immediately or chill for later.
Notes
- For an extra kick, add a pinch of red pepper flakes to the dressing.
- You can substitute canned salmon for tuna if desired.
- Feel free to add other vegetables like cucumber or bell peppers.
