Description

A vibrant Mediterranean tuna pasta salad bursting with fresh flavors of olives, cherry tomatoes, feta cheese, and a zesty olive oil dressing.


Ingredients

  • 12 ounces pasta
  • 7 ounces tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, tuna, cherry tomatoes, red onion, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Stir in the chopped parsley.
  6. Serve immediately or chill for later.

Notes

  • For an extra kick, add a pinch of red pepper flakes to the dressing.
