- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium zucchini, thinly sliced
- 2 medium yellow squash, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Add sliced zucchini and yellow squash to the skillet. Cook, stirring occasionally, until slightly tender, about 8-10 minutes.
- Stir in the halved cherry tomatoes, crumbled feta cheese, fresh parsley, and fresh mint. Season with salt and black pepper to taste.
- Transfer the mixture to a baking dish.
- Bake for 20-25 minutes, or until the casserole is heated through and the tomatoes are softened.
