Description
Bake these simple crisps featuring spinach, salty feta cheese, and Mediterranean herbs until they are golden brown and crisp.

- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 10 ounces fresh spinach, chopped
- 4 ounces feta cheese, crumbled
- 1 large egg, lightly beaten
- 1 teaspoon dried oregano
- 1/2 teaspoon fresh dill, chopped
- 1/4 teaspoon black pepper
- 1 package (16 ounces) phyllo dough, thawed
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
- Heat the olive oil in a skillet over medium heat. Add the onion and cook until soft, about 5 minutes.
- Add the chopped spinach to the skillet. Cook until the spinach wilts completely and all excess moisture evaporates. Remove from heat and let cool slightly.
- In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten egg, oregano, dill, and black pepper. Mix well.
- Lay one sheet of phyllo dough on a clean, dry surface. Brush the entire surface lightly with melted butter.
- Place another sheet of phyllo dough directly on top of the first sheet. Brush this second sheet with butter. Repeat this process until you have stacked 4 buttered sheets of phyllo dough.
- Cut the stacked phyllo sheets into 9 equal squares.
- Place about 1 tablespoon of the spinach and feta filling onto the center of each square.
- Fold the corners of the phyllo square over the filling to meet in the center, creating a small pouch or purse shape. Pinch the edges gently to seal.
- Place the finished crisps seam-side down on the prepared baking sheet. Brush the tops lightly with remaining melted butter.
- Bake for 15 to 18 minutes, or until the crisps are golden brown and crisp.
- Serve warm.
Notes
- If you prefer a less rich flavor, brush the phyllo sheets with olive oil instead of butter.
- For an extra layer of flavor, add a small squeeze of fresh lemon juice to the filling mixture.
- You can prepare the filling up to one day ahead and store it covered in the refrigerator.
