Description
Make these easy, crispy Mediterranean Spinach and Feta Cheese Crisps using phyllo dough. They are perfect as a party appetizer or a light snack.

- 1 tablespoon olive oil
- 1 small yellow onion, finely chopped
- 10 ounces fresh spinach, chopped
- 4 ounces crumbled feta cheese
- 1 large egg, lightly beaten
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 12 sheets phyllo dough, thawed
- 1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
- Heat the olive oil in a skillet over medium heat. Add the onion and cook until soft, about 5 minutes.
- Add the chopped spinach to the skillet. Cook until the spinach has wilted and all the moisture has evaporated. Remove from heat and let cool slightly.
- In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten egg, oregano, pepper, and salt. Mix well.
- Lay one sheet of phyllo dough on a clean surface. Brush lightly with melted butter. Place another sheet directly on top and brush with butter. Repeat until you have a stack of 6 buttered sheets.
- Cut the stacked phyllo sheets lengthwise into 3 equal strips.
- Place about 1 tablespoon of the spinach and feta filling near one end of a strip. Fold the corner over the filling to form a triangle shape, then continue folding the strip like you would fold a flag, ensuring the filling is enclosed in a tight triangle. Brush the final edge with butter to seal.
- Place the finished crisp seam-side down on the prepared baking sheet. Repeat the process with the remaining 6 sheets of phyllo and the rest of the filling, making 6 crisps total.
- Brush the tops of the crisps lightly with any remaining melted butter.
- Bake for 15 to 18 minutes, or until the phyllo is golden brown and crisp. Serve warm.
Notes
- If you want a tangier flavor, add 1 teaspoon of fresh lemon zest to the filling mixture.
- For a deeper Mediterranean flavor profile, use high-quality Greek olive oil.
- You can prepare the filling a day ahead and store it covered in the refrigerator.
