- 1.5 lbs large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Season the shrimp lightly with salt and pepper.
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the minced garlic and cook for 1 minute until fragrant. Do not let it brown.
- Pour in the white wine or broth and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
- Add the chopped sun-dried tomatoes and Italian seasoning. Cook for 1 minute.
- Pour in the heavy cream and chicken broth. Bring the sauce to a gentle simmer.
- Reduce the heat to low and stir in the Parmesan cheese until the sauce is smooth. Add red pepper flakes if using.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until pink and opaque.
- Stir in the fresh spinach until it wilts into the sauce, about 1 minute.
- Taste the sauce and adjust salt and pepper as needed. Serve immediately over pasta or with crusty bread.
Notes
- Serve this shrimp over cooked linguine, fettuccine, or zucchini noodles for a complete meal.
- For a brighter flavor, add a squeeze of fresh lemon juice just before serving.
- If you prefer a thicker sauce, let it simmer uncovered for a few extra minutes before adding the shrimp.
