  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh thyme leaves (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels. Season generously with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin for 2-3 minutes per side until browned.
  4. While the pork sears, whisk together maple syrup, Dijon mustard, and apple cider vinegar in a small bowl. Stir in thyme if using.
  5. Pour the maple Dijon mixture over the pork tenderloin in the skillet.
  6. Transfer the skillet to the preheated oven.
  7. Roast for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  8. Let the pork rest for 5-10 minutes before slicing.

  • For a deeper flavor, you can marinate the pork in half of the maple Dijon mixture for 30 minutes before searing.
  • If you don’t have an oven-safe skillet, you can sear the pork in a regular skillet and then transfer it to a baking dish before adding the glaze and roasting.
