  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  2. Add chopped onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Add crushed tomatoes, kidney beans, black beans, and diced tomatoes with green chilies. Stir to combine.
  5. Add chili powder, cumin, salt, and pepper. Stir well.
  6. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or longer for flavors to meld.
  7. For camping, cool the chili completely, then transfer to airtight containers or freezer bags. Store in a cooler or freezer until ready to use.
  8. To reheat while camping, warm the chili over a campfire or camp stove until heated through.

  • You can customize the heat by adding cayenne pepper or jalapeños.
