A delicious and healthy low-carb squash casserole, perfect for a satisfying meal.


Ingredients

  • 1 lb yellow squash, thinly sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup almond flour
  • 2 tbsp melted butter


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt 2 tablespoons of butter over medium heat.
  3. Add the sliced squash, chopped onion, and minced garlic. Cook until the squash is tender, about 8-10 minutes.
  4. Stir in the shredded cheddar cheese, heavy cream, salt, and pepper. Mix until the cheese is melted and the mixture is well combined.
  5. In a small bowl, combine the almond flour and 2 tablespoons of melted butter. Mix until crumbly.
  6. Pour the squash mixture into a lightly greased baking dish.
  7. Sprinkle the almond flour topping evenly over the squash mixture.
  8. Bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbly.
  9. Let it cool slightly before serving.

Notes

  • You can substitute zucchini for yellow squash if preferred.
  • For a spicier casserole, add a pinch of red pepper flakes.
  • Feel free to add other vegetables like bell peppers or mushrooms.
