  • 1.5 lb cooked, shredded chicken breast
  • 10 oz fresh spinach, roughly chopped
  • 8 oz cremini mushrooms, sliced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Add mushrooms to the skillet and cook until they release their liquid and brown, about 7-10 minutes.
  4. Add garlic and cook for 1 minute until fragrant. Stir in the spinach until it wilts completely. Remove the skillet from the heat.
  5. In a large bowl, combine the softened cream cheese, heavy cream, Italian seasoning, salt, and pepper. Mix until smooth.
  6. Stir in the shredded chicken, the cooked vegetable mixture, and 1/2 cup of the mozzarella cheese into the cream cheese mixture until everything is evenly coated.
  7. Transfer the mixture to the prepared baking dish, spreading it into an even layer.
  8. Top the casserole evenly with the remaining 1/2 cup mozzarella cheese and all of the Parmesan cheese.
  9. Bake for 20 to 25 minutes, or until the top is golden brown and the casserole is heated through.
  10. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For a richer flavor, use rotisserie chicken.
  • If you prefer a sharper taste, substitute Gruyère cheese for half of the mozzarella.
  • To make this dairy-free, substitute full-fat coconut cream for the heavy cream and use a suitable dairy-free cream cheese alternative.
