Description
Quick and delicious loaded sweet potato skins made easy with a 15-minute microwave trick. Perfect for an appetizer or side dish.
Ingredients

- 2 medium sweet potatoes
- 4 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons chopped chives
- Salt and pepper to taste
Instructions
- Wash sweet potatoes. Pierce them several times with a fork.
- Microwave sweet potatoes on high for 5-7 minutes, or until tender.
- Let cool slightly, then cut in half lengthwise.
- Scoop out most of the flesh, leaving about a 1/4-inch shell.
- Mash the scooped-out flesh with salt and pepper.
- Spoon the mashed sweet potato back into the shells.
- Top with crumbled bacon and shredded cheddar cheese.
- Microwave for another 1-2 minutes, or until cheese is melted.
- Garnish with sour cream and chopped chives.
Notes
- You can substitute other toppings like pulled pork, black beans, or green onions.
- Ensure sweet potatoes are tender before scooping.
