Description

Quick and delicious loaded sweet potato skins made easy with a 15-minute microwave trick. Perfect for an appetizer or side dish.


Ingredients

  • 2 medium sweet potatoes
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons chopped chives
  • Salt and pepper to taste


Instructions

  1. Wash sweet potatoes. Pierce them several times with a fork.
  2. Microwave sweet potatoes on high for 5-7 minutes, or until tender.
  3. Let cool slightly, then cut in half lengthwise.
  4. Scoop out most of the flesh, leaving about a 1/4-inch shell.
  5. Mash the scooped-out flesh with salt and pepper.
  6. Spoon the mashed sweet potato back into the shells.
  7. Top with crumbled bacon and shredded cheddar cheese.
  8. Microwave for another 1-2 minutes, or until cheese is melted.
  9. Garnish with sour cream and chopped chives.
