- 1 bag tortilla chips
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup chopped red onion
- 1/2 cup chopped bell pepper (any color)
- Optional toppings: sour cream, salsa, guacamole, jalapeños
Instructions
- Preheat your oven to 400°F (200°C).
- Spread the tortilla chips evenly on a large baking sheet.
- In a skillet, brown the ground beef or turkey over medium heat. Drain any excess fat.
- Stir in the taco seasoning and black beans with the meat. Cook according to seasoning packet instructions.
- Spoon the meat and bean mixture evenly over the tortilla chips on the baking sheet.
- Sprinkle the shredded cheddar and Monterey Jack cheeses over the meat mixture.
- Top with chopped red onion and bell pepper.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly.
- Remove from oven and add your favorite optional toppings before serving.

- For a vegetarian option, omit the meat and add extra beans or seasoned tofu.
