Make the ultimate Loaded Chili Cheese Fries for your next game day gathering. This recipe delivers big flavor and is perfect for sharing.

Ingredients

Scale
  • 2 large Russet potatoes, cut into fries
  • Vegetable oil for frying
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, sliced jalapeños

Instructions

  1. Soak the cut potatoes in cold water for at least 30 minutes. Drain and thoroughly pat dry.
  2. Heat vegetable oil in a deep fryer or heavy pot to 325°F (160°C). Fry potatoes in batches until lightly golden, about 5-7 minutes. Remove and drain on paper towels. Increase oil temperature to 375°F (190°C).
  3. Fry the potatoes a second time until deep golden brown and crisp, about 2-4 minutes. Drain well and season immediately with salt. Keep warm.
  4. While fries cook, prepare the chili. Brown the ground beef in a skillet over medium heat. Drain off excess fat.
  5. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  6. Stir in the kidney beans, diced tomatoes, chili powder, cumin, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  7. Layer the hot fries on a large oven-safe platter or baking sheet.
  8. Spoon the chili evenly over the fries.
  9. Sprinkle both the cheddar and Monterey Jack cheeses over the chili.
  10. Bake at 375°F (190°C) for 5-8 minutes, or until cheese is melted and bubbly.
  11. Add your favorite toppings before serving immediately.

Notes

  • For extra crispy fries, ensure potatoes are completely dry before the first fry.
  • Adjust chili powder to control the spice level for your guests.
  • Use high-quality cheese for the best melt.
