Description
This potato salad tastes like a loaded baked potato. It has bacon, cheese, sour cream, and chives.

- 2 pounds russet potatoes, peeled and cut into 1-inch cubes
- 8 slices bacon, cooked crisp and crumbled
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup chopped fresh chives
- 1 cup shredded cheddar cheese
- 2 tablespoons milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place potato cubes in a large pot. Cover with cold water by 1 inch. Bring to a boil, then reduce heat and simmer until tender, about 10-15 minutes.
- Drain potatoes and let cool slightly.
- In a large bowl, combine sour cream, mayonnaise, chives, milk, salt, and pepper. Mix well.
- Add cooled potatoes, crumbled bacon, and shredded cheddar cheese to the sour cream mixture.
- Gently fold until all ingredients are combined.
- Refrigerate for at least 1 hour before serving to allow flavors to meld.
Notes
- For best results, use good quality bacon.
- Adjust salt and pepper to your taste.
- You can add a dash of hot sauce for a little kick.
