Description

This potato salad tastes like a loaded baked potato. It has bacon, cheese, sour cream, and chives.


Ingredients

  • 2 pounds russet potatoes, peeled and cut into 1-inch cubes
  • 8 slices bacon, cooked crisp and crumbled
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh chives
  • 1 cup shredded cheddar cheese
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Place potato cubes in a large pot. Cover with cold water by 1 inch. Bring to a boil, then reduce heat and simmer until tender, about 10-15 minutes.
  2. Drain potatoes and let cool slightly.
  3. In a large bowl, combine sour cream, mayonnaise, chives, milk, salt, and pepper. Mix well.
  4. Add cooled potatoes, crumbled bacon, and shredded cheddar cheese to the sour cream mixture.
  5. Gently fold until all ingredients are combined.
  6. Refrigerate for at least 1 hour before serving to allow flavors to meld.
