Description

Soft, glazed cookies featuring the fresh flavors of lemon and zucchini, with a hint of creamy ricotta.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk ricotta cheese
  • 1 cup grated zucchini, squeezed dry
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • For the glaze:
  • 2 cups powdered sugar
  • 1/4 cup fresh lemon juice
  • 1-2 tablespoons milk or water


Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Add the ricotta cheese, grated zucchini, lemon juice, and lemon zest. Mix until well combined.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Drop spoonfuls of dough onto the prepared baking sheets.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. While the cookies are cooling, prepare the glaze. In a medium bowl, whisk together the powdered sugar and lemon juice. Add milk or water a tablespoon at a time until you reach a desired consistency.
  11. Once the cookies are completely cool, dip the tops of the cookies in the glaze or drizzle the glaze over them.
  12. Let the glaze set before serving.

Notes

  • Make sure to squeeze the excess moisture out of the grated zucchini.
  • Do not overmix the dough after adding the dry ingredients.
  • Adjust the consistency of the glaze by adding more powdered sugar for a thicker glaze or more liquid for a thinner glaze.
