Description

Delicious Lemon Zucchini Bars with a sweet glaze, perfect for a light dessert or snack. These bars are moist, flavorful, and easy to make, bringing a taste of sunshine to your kitchen.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (about 1 medium)
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the grated zucchini, lemon juice, and lemon zest.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely in the pan on a wire rack.
  10. While the bars are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Add more lemon juice if needed to reach desired consistency.
  11. Once the bars are completely cool, drizzle the glaze over the top.
  12. Let the glaze set for about 15-20 minutes before cutting into bars and serving.

Notes

  • Ensure your zucchini is well-drained after grating to prevent excess moisture in the bars.
  • You can add a pinch of cinnamon or nutmeg to the batter for extra warmth.
  • Store leftover bars in an airtight container at room temperature for up to 3 days.
