Ingredients

- 1 whole chicken (about 3-4 pounds)
- 1 lemon, halved
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 4 cloves garlic, smashed
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry with paper towels. This helps the skin get crispy.
- Place the chicken in a roasting pan.
- Squeeze the juice of one lemon half over the chicken. Place the squeezed lemon half inside the chicken cavity.
- Tuck the rosemary sprigs, thyme sprigs, and smashed garlic cloves into the chicken cavity.
- Drizzle the olive oil over the chicken.
- Season generously with salt and black pepper.
- Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh and the juices run clear.
- Let the chicken rest for 10-15 minutes before carving.
Notes
- You can add other herbs like sage or parsley.
- For extra flavor, you can place sliced lemon and garlic around the chicken in the roasting pan.
- Basting the chicken with its own juices every 20-30 minutes will keep it moist.
