Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 4 medium zucchini, spiralized into noodles
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Pat the shrimp dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
  4. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
  5. Stir in the lemon juice and red pepper flakes (if using).
  6. Add the zucchini noodles to the skillet and toss to coat with the lemon garlic sauce. Cook for 2-3 minutes until the noodles are tender-crisp.
  7. Return the cooked shrimp to the skillet and toss everything together.
  8. Stir in the fresh parsley and season with additional salt and pepper if needed.
  9. Serve immediately.

  • For extra flavor, you can add a splash of white wine when you add the lemon juice.
