Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 pound linguine or spaghetti
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Juice of 1 lemon
  • 1/4 cup chopped fresh parsley


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned on all sides. Remove chicken from the pot and set aside.
  2. Add minced garlic to the pot and cook for about 30 seconds until fragrant, being careful not to burn it.
  3. Add the uncooked pasta and chicken broth to the pot. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente, stirring occasionally.
  4. Stir in the heavy cream and Parmesan cheese. Return the cooked chicken to the pot.
  5. Cook for another 2-3 minutes, stirring, until the sauce has thickened slightly and the chicken is heated through.
  6. Stir in the lemon juice and fresh parsley. Season with additional salt and pepper if needed.
  7. Serve immediately.

Notes

  • For a lighter sauce, you can substitute half-and-half for heavy cream.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Feel free to add your favorite vegetables, such as spinach or peas, in the last few minutes of cooking.
