- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper to taste
- 3 cloves garlic, minced
- 1 pound linguine or spaghetti
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Juice of 1 lemon
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned on all sides. Remove chicken from the pot and set aside.
- Add minced garlic to the pot and cook for about 30 seconds until fragrant, being careful not to burn it.
- Add the uncooked pasta and chicken broth to the pot. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente, stirring occasionally.
- Stir in the heavy cream and Parmesan cheese. Return the cooked chicken to the pot.
- Cook for another 2-3 minutes, stirring, until the sauce has thickened slightly and the chicken is heated through.
- Stir in the lemon juice and fresh parsley. Season with additional salt and pepper if needed.
- Serve immediately.
Notes
- For a lighter sauce, you can substitute half-and-half for heavy cream.
- Add a pinch of red pepper flakes for a touch of heat.
- Feel free to add your favorite vegetables, such as spinach or peas, in the last few minutes of cooking.
