Instructions
- Season the scallops with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add scallops to the hot skillet in a single layer. Sear for 1.5-2 minutes per side until golden brown and cooked through. Remove scallops from the skillet and set aside.
- Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
- If using, add white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
- Stir in lemon juice and parsley.
- Return scallops to the skillet and toss to coat in the sauce.
- Serve immediately.
