Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
- In a large bowl, whisk the melted butter and granulated sugar together until combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lemon zest, 1/4 cup lemon juice, and vanilla extract until smooth.
- In a separate small bowl, whisk together the 1 1/4 cups flour and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
- Gently fold in the remaining 1/4 cup flour.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
- Let the brownies cool completely in the pan on a wire rack.
- Prepare the glaze: Whisk the powdered sugar and 2 tablespoons of lemon juice together until smooth. Add more sugar or juice, one teaspoon at a time, to reach a thick but pourable consistency.
- Drizzle or spread the glaze evenly over the cooled brownies. Let the glaze set before cutting into squares.
Notes
- For a chewier texture, reduce the baking time by 2-3 minutes.
- If you want a stronger lemon flavor, increase the zest to 1 1/2 tablespoons.
