Prepare this bright and fresh breakfast the night before for a quick, no-cook meal ready in the morning.
Ingredients

- 1/2 cup rolled oats
- 1 tablespoon chia seeds
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup plain Greek yogurt or dairy-free alternative
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon lemon zest
- 1 teaspoon fresh lemon juice
- 1/4 cup fresh or frozen blueberries
- Pinch of salt
Instructions
- In a jar or container with a lid, combine the rolled oats, chia seeds, milk, yogurt, maple syrup, lemon zest, lemon juice, and salt.
- Stir the mixture well until all ingredients are incorporated. Scrape down the sides if necessary.
- Gently fold in the blueberries.
- Seal the container and place it in the refrigerator for at least 6 hours, or preferably overnight.
- In the morning, stir the oats. If the mixture is too thick, add a splash more milk until you reach your desired consistency.
- Serve cold directly from the jar.
Notes
- For a vegan option, use maple syrup instead of honey and a non-dairy milk and yogurt.
- If using frozen blueberries, they will release more juice, which can slightly color the oats.
- Add a scoop of protein powder with the dry ingredients for an extra protein boost.
