  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup diced cooked ham or sausage (optional)
  • 2 large eggs
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add diced onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
  3. If using, add diced ham or sausage and cook for another 2-3 minutes.
  4. Add the leftover stuffing to the skillet. Break it up with a spoon and cook until it starts to crisp up, about 7-10 minutes, stirring occasionally.
  5. Create two wells in the stuffing mixture. Crack an egg into each well.
  6. Cover the skillet and cook until the egg whites are set and the yolks are cooked to your preference, about 3-5 minutes.
  7. Season with salt and black pepper to taste.
  8. Garnish with fresh parsley before serving.
