  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 lasagna noodles, broken into pieces
  • 15 ounces ricotta cheese
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese


Instructions

  1. In a large skillet, cook Italian sausage over medium-high heat until browned. Drain off excess fat.
  2. Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more.
  3. Pour in crushed tomatoes and tomato sauce. Stir in oregano, basil, salt, and pepper. Bring to a simmer.
  4. Add broken lasagna noodles to the skillet, ensuring they are mostly submerged in the sauce. Cover and cook for 10-12 minutes, or until noodles are tender, stirring occasionally.
  5. While noodles cook, in a small bowl, combine ricotta cheese, egg, and Parmesan cheese.
  6. Once noodles are cooked, dollop spoonfuls of the ricotta mixture over the top of the lasagna.
  7. Sprinkle shredded mozzarella cheese evenly over the ricotta and sauce.
  8. Cover the skillet and cook for another 5 minutes, or until the mozzarella is melted and bubbly.
  9. Let stand for a few minutes before serving.

Notes

  • For a spicier lasagna, use hot Italian sausage.
  • You can substitute ground beef or turkey for the Italian sausage.
