Crispy Spinach and Feta Bites with Melted Cheese

Description

Make these easy, baked bites featuring a crispy exterior, a savory filling of spinach and feta, and a melted cheese center.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces frozen chopped spinach, thawed and squeezed very dry
  • 4 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 package (14.1 ounces) refrigerated pie crusts or puff pastry sheets
  • 1 large egg, beaten (for egg wash)
  • Sesame seeds (optional, for topping)


Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute more. Remove from heat.
  3. In a medium bowl, combine the squeezed dry spinach, cooked onion and garlic mixture, crumbled feta cheese, softened cream cheese, 1/4 cup of the mozzarella cheese, salt, pepper, and nutmeg. Mix well until fully combined.
  4. Unroll the pie crusts or puff pastry sheets onto a lightly floured surface. Cut each sheet into 9 equal squares (you should have 18 squares total).
  5. Place about 1 heaping teaspoon of the spinach mixture onto the center of one square. Top this with a tiny pinch (about 1/4 teaspoon) of the remaining mozzarella cheese.
  6. Place a second square directly on top of the filling. Press the edges firmly together with your fingers to seal. Crimp the edges with a fork to create a tight seal, forming a bite-sized pocket.
  7. Place the sealed bites on the prepared baking sheets. Brush the tops lightly with the beaten egg wash and sprinkle with sesame seeds, if using.
  8. Bake for 15 to 18 minutes, or until the pastry is golden brown and crispy.
  9. Let the bites cool slightly on the baking sheet before serving.

Notes

  • Squeeze the spinach very dry; excess moisture prevents the bites from becoming crispy.
  • You can use an air fryer set to 375°F (190°C) for 10-12 minutes, working in batches.
  • Serve these warm with a side of marinara sauce or plain Greek yogurt dip.
