- 2 cups cooked rice, preferably day-old
- 1 cup chopped kimchi, plus 2 tablespoons kimchi juice
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 green onion, sliced (for garnish)
- 1 tablespoon toasted sesame seeds (for garnish)
Instructions
- In a small bowl, mix together the gochujang, soy sauce, sesame oil, and kimchi juice. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chopped onion and cook until softened, about 2-3 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the cooked rice and chopped kimchi to the skillet. Stir fry for 3-4 minutes, breaking up the rice and ensuring everything is well combined.
- Pour the prepared sauce mixture over the rice and kimchi. Stir well to coat everything evenly. Cook for another 2-3 minutes, until the rice is heated through and the sauce has thickened slightly.
- Serve immediately, garnished with sliced green onions and toasted sesame seeds.
Notes
- Using day-old rice is recommended as it is drier and will result in a better texture for fried rice.
- Adjust the amount of gochujang to your spice preference.
- Feel free to add other ingredients like cooked protein (chicken, tofu, or spam) or vegetables (peas, carrots) if you have them on hand.
