Description

Make this hearty, low-carb taco soup using ground beef. It is simple to prepare and fits a ketogenic diet plan.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 (15 ounce) can tomato sauce (check for no added sugar)
  • 4 cups beef broth
  • 2 tablespoons keto taco seasoning (see notes)
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the ground beef, onion, and bell pepper. Cook, breaking up the meat, until the beef is browned and vegetables are soft, about 8 minutes. Drain any excess grease.
  3. Stir in the diced tomatoes with green chilies, tomato sauce, beef broth, taco seasoning, cumin, and oregano.
  4. Bring the soup to a boil, then reduce the heat to low.
  5. Simmer, uncovered, for at least 20 minutes to allow the flavors to combine.
  6. Season with salt and pepper before serving.

Notes

  • For homemade keto taco seasoning, mix 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, and a pinch of cayenne pepper.
  • Serve with keto-friendly toppings like shredded cheddar cheese, sour cream, avocado slices, or fresh cilantro.
  • For a slow cooker method, brown the beef and sauté the vegetables first. Place all ingredients in the slow cooker and cook on low for 4 to 6 hours.
