- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 (15 ounce) can tomato sauce (check for no added sugar)
- 4 cups beef broth
- 2 tablespoons keto taco seasoning (see notes)
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the ground beef, onion, and bell pepper. Cook, breaking up the meat, until the beef is browned and vegetables are soft, about 8 minutes. Drain any excess grease.
- Stir in the diced tomatoes with green chilies, tomato sauce, beef broth, taco seasoning, cumin, and oregano.
- Bring the soup to a boil, then reduce the heat to low.
- Simmer, uncovered, for at least 20 minutes to allow the flavors to combine.
- Season with salt and pepper before serving.
Notes
- For homemade keto taco seasoning, mix 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, and a pinch of cayenne pepper.
- Serve with keto-friendly toppings like shredded cheddar cheese, sour cream, avocado slices, or fresh cilantro.
- For a slow cooker method, brown the beef and sauté the vegetables first. Place all ingredients in the slow cooker and cook on low for 4 to 6 hours.
