  • 1/2 cup almond flour
  • 1/2 cup heavy cream
  • 1 large egg, lightly beaten
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce (check label for low carb)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sugar-free ketchup or tomato paste for glaze
  • 1 tablespoon apple cider vinegar for glaze
  • 1 teaspoon erythritol or preferred keto sweetener for glaze


Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard loaf pan or line it with parchment paper.
  2. In a large bowl, combine the ground beef, almond flour, heavy cream, egg, chopped onion, minced garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently with your hands until just combined; do not overmix.
  3. Press the meat mixture evenly into the prepared loaf pan.
  4. In a small bowl, whisk together the sugar-free ketchup (or tomato paste), apple cider vinegar, and keto sweetener to create the glaze.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Bake for 55 to 65 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing. This helps keep your keto meatloaf juicy.

Notes

  • For an even richer flavor, substitute 1/4 cup of the ground beef with ground pork.
