Description
Assemble quick, low-carb roll-ups mimicking the flavor of an Italian sub sandwich using deli meats as the wrap.

- 8 large slices provolone cheese
- 4 slices thinly sliced ham
- 4 slices salami
- 4 slices pepperoni
- 4 slices capicola
- 1/2 cup shredded iceberg lettuce
- 4 thin slices tomato
- 4 thin slices red onion
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- Pinch of salt
- Pinch of black pepper
Instructions
- Lay out the 8 slices of provolone cheese on a clean surface, overlapping slightly if necessary to create a large enough surface for the fillings.
- Place one slice each of ham, salami, pepperoni, and capicola onto the provolone slices, distributing the meats evenly across the cheese.
- Top the meats with a small amount of shredded lettuce, one tomato slice, and a few thin onion rings on each portion.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
- Drizzle a small amount of the dressing mixture over the fillings on each cheese and meat stack.
- Starting from one edge, tightly roll up each stack. You should get two roll-ups per provolone slice assembly, resulting in 8 total roll-ups.
- Secure the roll-ups with toothpicks if needed for serving immediately, or wrap them tightly in plastic wrap for later.
Notes
- You can substitute the provolone slices with large, low-carb tortillas if you prefer a more traditional wrap structure.
- For extra flavor, add a few thin slices of pickled pepperoncini inside the roll-up.
- Prepare the dressing ahead of time and store it in the refrigerator.
