- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 pound cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 8 ounces cream cheese, softened
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Season the chicken pieces lightly with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Add the sliced mushrooms to the same skillet. Cook until they release their moisture and start to brown, about 8 minutes.
- Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
- Reduce the heat to low. Stir in the softened cream cheese, heavy cream, Italian seasoning, salt, and pepper until the sauce is smooth and creamy.
- Stir in half of the mozzarella cheese and all of the Parmesan cheese until melted into the sauce.
- Return the cooked chicken to the skillet and stir to coat everything evenly in the sauce.
- Pour the entire mixture into the prepared baking dish.
- Sprinkle the remaining 1/2 cup of mozzarella cheese over the top.
- Bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
- Let the casserole rest for 5 minutes before garnishing with fresh parsley and serving.
Notes
- For meal prep, cool the casserole completely before covering and refrigerating for up to 4 days.
- If you prefer a thicker sauce, reduce the chicken broth slightly before adding the cream cheese.
- You can substitute chicken thighs for breasts if desired; adjust cooking time slightly.
