- 1 pound ground sirloin beef
- 4 slices bacon, chopped
- 1 medium yellow onion, chopped
- 2 stalks celery, chopped
- 4 cups beef broth
- 1 teaspoon dried mustard powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt (or to taste)
- 8 ounces cream cheese, cubed
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1/4 cup sour cream (optional, for tang)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Cook the chopped bacon in a large pot or Dutch oven over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.
- Add the ground sirloin to the pot and cook, breaking it up with a spoon, until browned. Drain off excess grease if necessary.
- Add the chopped onion and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
- Stir in the mustard powder, garlic powder, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in the beef broth. Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to combine.
- Reduce the heat to low. Add the cubed cream cheese, stirring constantly until it melts completely into the broth.
- Stir in the heavy cream. Heat gently, but do not allow the soup to boil after adding the cream.
- Remove the pot from the heat. Gradually stir in the shredded cheddar cheese until the soup is smooth and fully incorporated.
- If using, stir in the sour cream for extra tang. Taste and adjust salt and pepper as needed.
- Ladle the soup into bowls. Garnish each serving with the reserved crispy bacon and fresh parsley.
Notes
- For a thicker soup without carbs, you can blend about 1 cup of the finished soup with a small amount of cream cheese and then stir the mixture back into the pot.
- Use high-quality sharp cheddar for the best flavor.
- Serve with keto-friendly toppings like chopped dill pickles or a drizzle of sugar-free ketchup/mustard if desired.
