- 1 head cauliflower (about 4 cups riced)
- 1 large egg, beaten
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese

- 1/4 teaspoon salt
- 1 cup cooked, shredded chicken breast
- 1/3 cup keto-friendly BBQ sauce
- 1/2 cup shredded mozzarella cheese (for topping)
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh cilantro, chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Rice the cauliflower in a food processor until it resembles fine grains.
- Steam or microwave the riced cauliflower until soft, about 5-7 minutes. Squeeze out as much moisture as possible using a clean kitchen towel. This step is key for a crispy crust!
- In a bowl, combine the dry cauliflower, beaten egg, 1/2 cup mozzarella, Parmesan cheese, oregano, and salt. Mix well.
- Press the mixture firmly onto the prepared baking sheet into a 10-inch round crust shape, about 1/4 inch thick.
