  • 1 large egg, beaten
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1 cup cooked, shredded chicken breast
  • 1/3 cup keto-friendly BBQ sauce
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rice the cauliflower in a food processor until it resembles fine grains.
  3. Steam or microwave the riced cauliflower until soft, about 5-7 minutes. Squeeze out as much moisture as possible using a clean kitchen towel. This step is key for a crispy crust!
  4. In a bowl, combine the dry cauliflower, beaten egg, 1/2 cup mozzarella, Parmesan cheese, oregano, and salt. Mix well.
  5. Press the mixture firmly onto the prepared baking sheet into a 10-inch round crust shape, about 1/4 inch thick.
  6. Bake the crust for 15-20 minutes, or until golden brown and firm.
  7. Remove the crust from the oven. Spread the keto BBQ sauce evenly over the crust.
