Description

Simple recipe for low-carb asparagus spears wrapped in bacon, baked until the bacon is crisp.


Ingredients

  • 1 bunch fresh asparagus, tough ends trimmed
  • 8 slices thin-cut bacon (check label for zero added sugar)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and trim the woody ends from the asparagus spears.
  3. Toss the asparagus lightly with olive oil, garlic powder, pepper, and salt in a bowl.
  4. Divide the asparagus into 4 equal bundles.
  5. Wrap each bundle tightly with 2 slices of bacon, securing the ends underneath the bundle.
  6. Place the bundles on the prepared baking sheet.
  7. Bake for 15 to 20 minutes, or until the bacon reaches your desired level of crispness. For extra crispiness, you can broil for the last 1-2 minutes, watching closely to prevent burning.
  8. Remove from the oven and let rest for 2 minutes before serving.

Notes

  • Use thin-cut bacon for faster cooking and crispier results.
  • If your bacon does not crisp up enough in the oven, transfer the bundles to a wire rack set over the baking sheet for the last 5 minutes of cooking to allow air circulation.
