- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup plain Greek yogurt
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
- In a medium bowl, whisk together the Greek yogurt, lemon juice, minced garlic, olive oil, oregano, salt, pepper, and thyme to create the marinade.
- Place the chicken pieces in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are fully coated.
- Refrigerate and marinate for at least 2 hours, or up to 8 hours for maximum tenderness.
- Preheat your grill to medium-high heat or preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- If grilling, lightly oil the grates. Place the chicken on the grill and cook for 6 to 8 minutes per side, until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
- If baking, place the chicken on a lined baking sheet. Bake for 20 to 25 minutes, or until cooked through.
- Let the chicken rest for 5 minutes before slicing and serving.
Notes
- For extra flavor, add 1 teaspoon of smoked paprika to the marinade.
- You can use this marinade for chicken skewers or cut the chicken into cubes for a Mediterranean salad topping.
- If using chicken breasts, pound them to an even thickness before marinating to promote even cooking.
