- 1 box white cake mix (plus ingredients listed on box)
- 1 package (3 oz) strawberry Jello (gelatin)
- 1 cup boiling water
- 1 cup cold water
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup frozen strawberries, thawed and sliced (optional topping)
Instructions
- Prepare and bake the white cake according to the box directions for a 9×13 inch pan. Let the cake cool in the pan for 15 minutes after removing it from the oven.
- While the cake cools slightly, prepare the strawberry Jello. Dissolve the Jello powder in 1 cup of boiling water. Stir for 2 minutes until completely dissolved.
- Add 1 cup of cold water to the Jello mixture and stir briefly.
- Use the handle of a wooden spoon or a large fork to poke holes all over the top of the warm cake, spacing the holes about 1 inch apart. Poke all the way to the bottom of the cake.
- Slowly pour the liquid Jello mixture evenly over the entire surface of the cake, allowing the liquid to seep into the holes.
- Refrigerate the cake for at least 3 to 4 hours, or until the Jello is completely set.
- When ready to serve, prepare the topping. Beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form.
- Spread the whipped cream topping evenly over the set Jello layer. If using, arrange the thawed strawberry slices on top of the whipped cream.
- Slice and serve cold.
Notes
- For a more festive look, use a white cake mix and layer different colors of Jello (like red and pink) for a striped effect after the first layer sets slightly.
- You can substitute Cool Whip for the homemade whipped cream topping if you prefer a no-bake topping that holds its shape longer.
- If you want a stronger fruit flavor, use hot water and cold fruit juice (like strawberry juice) instead of plain cold water when mixing the Jello.
