Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 4 ounces cream cheese, softened
- 1/4 cup chopped pickled jalapeños
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly each chicken breast by slicing horizontally almost all the way through, creating a pocket.
- In a bowl, mix the softened cream cheese, chopped jalapeños, cheddar cheese, Monterey Jack cheese, garlic powder, salt, and pepper until well combined.
- Stuff the cheese mixture evenly into the pockets of the chicken breasts.
- Secure the opening with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
Notes
- For a milder flavor, remove the seeds from the jalapeños before chopping.
- You can add a pinch of smoked paprika to the cheese mixture for an extra layer of flavor.
- Serve with your favorite side dishes like mashed potatoes or a fresh salad.
