- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup cooked shredded chicken or black beans (optional)
- 1 tablespoon butter or oil
Instructions
- Cut out a Jack-o’-lantern face from one tortilla using a knife or small cookie cutters.
- Spread the cheeses evenly over the other tortilla. If using, add the chicken or black beans.
- Place the cut-out tortilla on top of the cheese-covered tortilla.
- Heat butter or oil in a skillet over medium heat.
- Carefully place the quesadilla in the skillet. Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
- Cut into wedges and serve immediately.
Notes
- For a spicier kick, add a pinch of chili powder or cumin to the cheese.
- Serve with salsa, sour cream, or guacamole for dipping.
