  • 1 pound bow tie pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • For the Dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Cook bow tie pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and black olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper for the dressing.
  4. Pour the dressing over the pasta mixture and toss gently to coat.
  5. Stir in fresh parsley and Parmesan cheese.
  6. Chill for at least 30 minutes before serving to allow flavors to meld.
