Ingredients

  • 1 cup water
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: crumbled cotija cheese, extra chili powder, lime wedges


Instructions

  1. Place the corn on the cob and water in the Instant Pot.
  2. Secure the lid and set the valve to sealing.
  3. Cook on high pressure for 3 minutes.
  4. Allow for a natural pressure release for 5 minutes, then perform a quick release.
  5. Carefully remove the corn from the Instant Pot.
  6. In a small bowl, mix together the mayonnaise, cilantro, lime juice, chili powder, salt, and pepper.
  7. Brush the corn evenly with the mayonnaise mixture.
