  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can crushed tomatoes
  • 1 cup full-fat coconut milk
  • 1/2 cup plain yogurt
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped, for garnish


Instructions

  1. Set your Instant Pot to ‘Sauté’ mode. Add olive oil and heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic and grated ginger. Cook for 1 minute until fragrant.
  3. Stir in garam masala, cumin, coriander, turmeric, paprika, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  4. Add the chicken pieces and stir to coat them in the spices.
  5. Pour in the crushed tomatoes and coconut milk. Stir to combine.
  6. Secure the lid and set the valve to ‘Sealing’. Select ‘Manual’ or ‘Pressure Cook’ mode and set the timer for 8 minutes at high pressure.
  7. Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then carefully perform a quick release of any remaining pressure.
  8. Open the lid. Stir in the yogurt until the sauce is smooth and creamy. Season with salt and pepper to taste.
  9. Garnish with fresh cilantro before serving. Serve hot with rice or naan.

Notes

  • For a milder flavor, omit the cayenne pepper.
  • If you don’t have coconut milk, heavy cream can be used as a substitute.
  • Ensure your Instant Pot is set to ‘Sealing’ before cooking.
