Description

A simple, refreshing, non-alcoholic beverage combining the bright taste of pineapple with creamy coconut, perfect for summer.


Ingredients

  • 1 cup frozen pineapple chunks
  • 1/2 cup coconut water
  • 1/4 cup coconut cream (or full-fat coconut milk)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon simple syrup (optional, adjust to taste)
  • Ice cubes


Instructions

  1. Place the frozen pineapple chunks, coconut water, coconut cream, and lime juice into a blender.
  2. Blend on high speed until the mixture is smooth and slushy. Add a splash more coconut water if the mixture is too thick.
  3. Taste the mixture and add simple syrup if you prefer more sweetness. Blend briefly to combine.
  4. Fill two tall glasses with ice cubes.
  5. Pour the blended mocktail mixture over the ice.
  6. Serve immediately.

Notes

  • For a garnish, use a pineapple wedge on the rim or a maraschino cherry.
  • If you do not have frozen pineapple, use fresh pineapple and add 1/2 cup of extra ice to the blender.
  • For a different texture, skip blending and simply stir all ingredients together in a shaker with ice, then strain into a glass filled with fresh ice.
