A simple, refreshing, non-alcoholic beverage combining the bright taste of pineapple with creamy coconut, perfect for summer.

- 1 cup frozen pineapple chunks
- 1/2 cup coconut water
- 1/4 cup coconut cream (or full-fat coconut milk)
- 1 tablespoon fresh lime juice
- 1 teaspoon simple syrup (optional, adjust to taste)
- Ice cubes
Instructions
- Place the frozen pineapple chunks, coconut water, coconut cream, and lime juice into a blender.
- Blend on high speed until the mixture is smooth and slushy. Add a splash more coconut water if the mixture is too thick.
- Taste the mixture and add simple syrup if you prefer more sweetness. Blend briefly to combine.
- Fill two tall glasses with ice cubes.
- Pour the blended mocktail mixture over the ice.
- Serve immediately.
Notes
- For a garnish, use a pineapple wedge on the rim or a maraschino cherry.
- If you do not have frozen pineapple, use fresh pineapple and add 1/2 cup of extra ice to the blender.
- For a different texture, skip blending and simply stir all ingredients together in a shaker with ice, then strain into a glass filled with fresh ice.
