- 1 tablespoon olive oil
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper (any color)
- 1/2 cup black beans, rinsed and drained
- 1/4 cup salsa
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- Pinch of cayenne pepper (optional)
- 2 large eggs
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, cotija cheese
Instructions
- Toast the bread slices until golden brown.
- While the bread is toasting, heat olive oil in a small skillet over medium heat.
- Add chopped onion and bell pepper to the skillet and sauté until softened, about 3-4 minutes.
- Stir in the black beans, salsa, chili powder, cumin, and cayenne pepper (if using). Cook for 2-3 minutes until heated through.
- Make two wells in the bean mixture. Crack an egg into each well.
- Cover the skillet and cook for 2-3 minutes, or until the egg whites are set and the yolks are cooked to your liking.
- Season the eggs with salt and pepper.
- Spoon the bean and egg mixture over the toasted bread.
- Add your favorite toppings like avocado, cilantro, or cheese.
- Serve immediately.

- You can use pre-cooked beans to save time.
- Adjust the spice level by adding more or less cayenne pepper.
