  • 2 slices of your favorite bread
  • 1 tablespoon olive oil
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper (any color)
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup salsa
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Pinch of cayenne pepper (optional)
  • 2 large eggs
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, cotija cheese


Instructions

  1. Toast the bread slices until golden brown.
  2. While the bread is toasting, heat olive oil in a small skillet over medium heat.
  3. Add chopped onion and bell pepper to the skillet and sauté until softened, about 3-4 minutes.
  4. Stir in the black beans, salsa, chili powder, cumin, and cayenne pepper (if using). Cook for 2-3 minutes until heated through.
  5. Make two wells in the bean mixture. Crack an egg into each well.
  6. Cover the skillet and cook for 2-3 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  7. Season the eggs with salt and pepper.
  8. Spoon the bean and egg mixture over the toasted bread.
  9. Add your favorite toppings like avocado, cilantro, or cheese.
  10. Serve immediately.

  • You can use pre-cooked beans to save time.
